Tried a new black bean chili recipe out, modified it to my tastes and omfg it turned out really good. It didn't even take very long. Just some quick chopping and dumping of ingredients into a single pot. I love cooking things in one pot. It's beyond my ability to mess up multiple pots. Except for special people, special occasions.



1lb ground turkey
2 cans of black beans
1 can tomato sauce
1 can tomato paste
1 can of corn
1 cup chopped celery
1 cup chopped onion
1 cup chopped red pepper
1 jalapeno seeded and chopped
2 tbsp garlic, minced
2tsp cumin
2 tsp chili powder
1 tsp salt
1 tsp black pepper
1 tsp ground coriander
2 tbsp lime
2 tbsp red wine vinegar
water as desired

I browned the turkey, added the spices. Added onions and garlic, stirred for a bit. Added the rest of the veggies. Added the canned things. Beans, corn, and then tomato sauce/paste. Added water. Simmered for a bit. Added lime and vinegar.

And it's really really good. *happy*

Must individually portion and not just consume entire pot.


Also finished assembling the vegetarian lasanga and put it in oven to bake. Between these two things I should have dinners and lunches set for the week. Also have salad stuff and fruit. And cereal and diet pepsi and yogurt and yeah. I'm ready to be good this week.

I need to go to bed early tonight, but happily not that early since I get to work at 9, not 8. Whee!

Someone I don't think it'd ship as well as the cookies *grin*

But highly recommend the recipe, the lime really added an exciting zing!
