While that processes away, let me share my recipe for turkey feta burgers. They came out really well using my George Foreman Grill.
Ingredients:
1lb ground turkey
4 tsp crumbled feta cheese (I like the basil/tomato or garlic/herb one)
1 yellow bell pepper (sliced lengthwise for roasting)
1 medium red onion (sliced very thin)
1/2 tsp ground cumin
1/4 tsp cayenne
1/2 tsp garlic powder
salt/pepper
4 wheat buns
lettuce, tomato, spinach leaves or whatever you like on your burger
Directions:
Plug in George Foreman Grill.
Season turkey with spices (to taste). Divide ground turkey into quarters. Roll quarter segment into a ball and poke a deep hole in the center of it (I just press in with my thumb). Place about 1 tsp feta in the center and pinch the hole closed and form patty. Set aside and repeat with remaining turkey segments.
I generally grill one while working with the remaining patties.
After grilling all four patties, I grill the roasted peppers. I find there's enough oil on the grill from the burgers that I don't need to spray it with olive oil.
Toast buns. Assemble burgers with yellow peppers, red onion slices and whatever else you like.
Variations:
I like to food process my turkey with some spinach (fresh, frozen, whatever) and shredded carrots. It's really flavorful and a great way to add some veggies to your food without taking away from the meatiness of the burger.
Red peppers would be just as nice, with some wilted spinach to pile on top, too. And sautéed cremini mushrooms, too.
Cheese is always exciting, but because it already has feta, I don't usually add more. Some provolone would go nicely with this.
Also the nice thing is, if you don't have these specific spices, you can vary as much as you like. No garlic powder? Try a bit of garlic salt or use fresh garlic. No cayenne, but have crushed red pepper, sure! No cumin, that's fine. I think this can be good even with just salt/pepper and the flavored feta.
