No work this weekend, nothing pressing to do. I'm very, very pleased.
Some of my favorite people are coming over for dinner, so I've planned for some comfort foods. I'm going to make:
Gougères (yes, I'm a one-trick pony, but they're so fucking good)
Grilled chicken breasts with fresh tomato-basil salsa (one of my favorite recipes since college)
Baked macaroni and cheese with bread-crumb topping
Homemade parmesan/cheddar bread
Berry cobbler with vanilla ice cream
Also, Comcast is sending a guy out to figure out why some of my channels are so absurdly fuzzy. It's always been like this, I'm just now getting around to dealing with it.
Oh, here's the grilled chicken breast recipe. It's very simple, but somehow very good.
Ingredients:
~1lb chicken breasts (4 pieces)
salt and pepper
1/4 cup olive oil
1/4 cup fresh lime juice
1 clove garlic, minced
1 tsp thyme leaves (dried or fresh, but should be minced if fresh)
1 tsp basil leaves (dried or fresh, but should be minced if fresh)
Salsa:
6 plum tomatoes, chopped
5 green tomatoes, sliced (including green tops)
1 Tbsp olive oil
1/4 cup chopped fresh basil or 2 Tbsp dried
1/2 tsp salt
Instructions:
Sprinkle chicken with salt and pepper. Heat grill.
Mix lime juice, olive oil, garlic, thyme, and basil.
Grill or broil chicken, 4 inches from heat, brushing with lime/oil mix.
Cook 6 minutes on each side, or until done.
For salsa, combine second set of ingredients. The recipe calls for processing this in a blender, but I've never done that, preferring the salsa chunky.
Spoon salsa over chicken, enjoy!
