Cook something for weekly lunches.
I absolutely have to stop eating out for lunch this week. I let myself get away with it the first few weeks because it was already stressful adjusting to a new schedule, but it's time to get better organized. Since my stomach rejects food before 10am, I need to pack something to eat during my break and something for lunch. I need to bring my Nalgene bottle to work and some fruit for when I need a snack.
I think I'm either going to make the Vegetarian Chili, angel hair pasta, or enchiladas. They'll all last me a week and are easy enough to portion into servings. It needs to be more exciting than a quick salad because that'll only tempt me to run across the street to City Soups. I just finished cleaning the kitchen though and am not excited about messing it up again. Boo.
I also need to bring my gym bag so I can hitch a ride to SMB with Ellie after work (or catch the 28 to Fremont). Enough moping around and dragging my feet. Oh speaking of bus, I need to make sure I have sufficient dollar bills and quarters for the next 2-3 days of bussing to work. FINALLY ordered my bus pass last week but it probably won't be here on time for the 1st. I'm thinking of driving in on Tuesday, though, because Judy might need some help after work to do some last minute cleaning out of her old house. Dec 1st the moving craziness should be all over for her. And she'll be SO MUCH CLOSER!! Yay to Wallingford; Boo to Leschi which was such a pain in the ass to get to.
In other exciting news, I finally switched out my old mouse for a new one. Note to self: do not take out rage onto computer parts because if you do, you will have to replace them. But the new mouse is nice and optical and be-wheeled. I can now right click again with impunity. It is delightful.

I have to give you the recipe for this vegetarian chili, though. It is to die for. I think your brood would really like it!
From Cooking Light Vegetarian Chili.
Ingredients:
1 tablespoon olive oil
1/2 cup chopped onion (I used one small onion, slightly larger than a golf
ball)
2 garlic gloves, minced
1 1/2 cup zucchini (I used one large, one medium)
1 cup chopped red bell pepper
1 cup chopped green bell pepper (I used yellow here, as I hate green
peppers)
4 cups chopped tomatoes (about 1 3/4 lbs) (worked out to be three large
tomatoes)
1 tablespoon chili powder
1 teaspoon Old Bay seasoning
1/4 teaspoon black pepper
2 (5.5 oz) cans spicy-hot vegetable juice
1 (15oz) can black beans (rinsed and drained)
1 (15oz) can kidney beans (rinsed and drained)
1 jalapeno pepper, minced
I added a 15oz can of corn, because I felt like it
Preparation:
Heat oil in pot over medium-high heat, add onion and garlic. Cook 2 minutes
or until tender, stirring constantly. Add zucchini and bell peppers, cook 5
minutes, stirring frequently. Add tomatoes and remaining ingredients,
stirring well to combine. Cover, reduce heat, and simmer 20 minutes,
stirring occasionally. Yield: 6 (1 1/3 cup) servings. 200 calories. 3.6
grams of fat, 12 grams of fiber. 10 grams of protein.
(Sometimes I cheat and stick a litte turkey sausage in it, too.)

Date: 2004-11-28 08:49 pm (UTC)I've been bringing canned soup each day for lunch and it's horribly high in sodium and rather dull anyway (Costco package so tons of cans of the same two types of soup). I'll have to get the few things I don't have and try this out!
