It's almost 4pm on Sunday, and the first of the cakes just went into the oven. I can't believe I'm starting so late, but I don't really regret the way I spent my morning: in bed, finishing Towers of Midnight. And then swanning around doing nothing in particular. It was gloriously fun.

Also gloriously fun: writing out menus and things on my chalkboard. The triple chocolate has a white chocolate mousse filling. The peach cake isn't really a peach cake so much as a cream cake filled with peach mousse and frosted with raspberry creme. The lemon frosting is going to be a whipped cream frosting with lemon curd.

But the first of the cakes (now) are actually out of the oven. I keep having thoughts that are Wrong. I thought I had mayonnaise (for the chocolate cake)--I didn't. Had to go to market. I thought I had three 9-inch round pans--I don't, I have two. I don't feel like running over to the cake supply store to buy one more pan, but it would make the next two cakes easier. Oh, well. Also running short on parchment rounds and cake boards. It's definitely time to re-supply. Maybe I'll go tomorrow, I need to go buy the support structure for the tower thingie, anyway.

This is my first time making a cream cake recipe--it smells good and looks pretty. I want to eat it. Good sign!

It turns out the recipe (for this and the lemon blueberry) is for three 8-inch round cakes, so I am trying to figure out what to do. Maybe I'll make another batch of these cream cakes and it can be 6 thin layers (as I put the batter into the 9-inch pans anyway) of cake with the peach mousse recipe--which I may double. And maybe I'll just double the recipe for the lemon blueberry cake to get the right sized 9-inch layers. This is why starting early is good, vs. my normal deadline-driven preference of procrastinate and hyperventilate.

Even though it's unlikely, I'm worried this still won't be enough cake for the 75 people. I don't think we've ever run short before, so it'll probably be okay though. Plus there's going to be a lot of food before the cakes.

Oh, man, your cake-making posts always make my mouth water.

(Also, my brain keeps insisting on reading this subject header as "project ninjacakes")

That's good to hear--one of these days I need to send you something to taste vs read about.

And maybe Nina will grow up to be a ninja; she's awesome enough for it!
