tortilla soup of joy

It's not quite 8am. I'm a little disgruntled with the overachievers at SDOT who worked tirelessly through the night to clear the icy roads, which has the unpleasant result of my having to go to work today.
I'm consoling myself that the weather may still take a nastier turn later on this week and make it impossible for me to get out there and I can work from home AND bake.
In any case, I finally made that tortilla soup I've been obsessed with and it was fucking fantastic. What a great recipe and it's pretty goddamn easy, too.
I've never made tortilla soup before and I wasn't sure how some of the stuff was going to turn out. (I had no idea that if you cut tortillas into bite sized pieces and cook them in a pot with a lot of awesome things, they disintegrate into this awesome, almost creamy texture.) It had just the right amount of spice. Her recipe doesn't call for salt, and the soup definitely needed that, but once added it was fantastic. (My guess is that her homemade stock was salty enough.) The other note I'll make is that she calls for four boneless, skinless chicken breasts. We must have different chicken breasts out here, because I only needed two. I would gauge it at about a pound of chicken breasts. It's no big deal, because now I have nicely seasoned chicken to use in tacos or salads later on this week.
Anyhow, if you do like to cook--I highly, highly recommend this. You could skip the initial step of making the tortilla chips but it was sorta fun and easy, too.
And now, to go shower begrudgingly and take a more complicated bus route since it's too late to take my express from the Park & Ride. *grumble*
